Why Are Non-Stick Pans Actually Non-Stick?
The secret is a coating called polytetrafluoroethylene (PTFE), better known as Teflon. PTFE has a unique molecular structure (carbon atoms surrounded by fluorine atoms). These fluorine atoms are so tightly packed and unreactive that they repel almost everything, including water, oil, and food. Nothing can grip them, so food slides right off with virtually no friction or chemical bonding. It's one of the slipperiest materials known to science.
Then why do regular pans stick?
Regular pans are made up of stainless steel, cast iron, or aluminum, which have microscopic pores and rough surfaces. Food particles and proteins seep into these spaces and bond with the metal, causing sticking. That's why you need oil to create a barrier.

Are Non-Stick Pans Harmful?
It depends on how you use them. PTFE is stable and non-toxic at normal cooking temperatures (under 400°F). However, above 500°F (260°C), the coating breaks down and releases fumes that can cause flu-like symptoms in humans and are harmful to pets. Problems occur when pans are preheated empty on high heat or left unattended. There was also concern about PFOA, a chemical once used in manufacturing Teflon. However, Modern non-stick pans are PFOA-free, so if you use them properly, health risks are minimal.
Is There a Difference in Cooking?
Yes. Non-stick pans excel at low to medium-heat cooking. They require less oil and clean up easily. However, they can't handle high heat. Regular pans, especially stainless steel and cast iron, handle high temperatures perfectly. They're ideal for searing steaks, developing crispy crusts, and making pan sauces.
Which Is Better?
It depends on what you're cooking. Non-stick pans are perfect for delicate, everyday foods like eggs and pancakes. Regular pans are better for high-heat cooking and developing deep flavors.
